Homemade Tiramisu

8EachEgg yolks
1CupGranulated sugar, divided
1.5CupsHeavy cream
2CupsMascarpone cheese
For the assembly
3QuartsRegular coffee
Lady Fingers
Unsweetened cocoa powder
Bittersweet chocolate, for shaving

Prep & Procedure

1. Shake & strain 1-4
2. Pour over Rose Tea cube
3. Top with Prosecco




Rose Tea Cube



  1. Using a mixer in a large bowl whip together egg yolks and ½ cup sugar until very pale yellow and about triple in volume. A slight ribbon should fall from the beaters when lifted from the bowl. Set it aside.
  2. In a medium bowl, whip cream and remaining ½ cup of sugar until creates soft-medium peaks. Add mascarpone cheese and continue to whip until it creates a soft, spreadable mixture with medium peaks. Gently fold the mascarpone mixture into the sweetened egg yolks until combined
  3. For the assembly, combine coffee and espresso in a bowl and set aside.
  4. Dip each lady finger into the espresso mixture. They are quite porous and will fall apart if left in the liquid too long.
  5. After dipping the lady fingers place them in a tiramisu plate until you’ve got an even layer, spread the mascarpone mixture onto the ladyfingers in one even layer using a piping pastry bag. Repeat with remaining espresso – dipped ladyfingers and mascarpone mixture.
  6. Dust top layer with cocoa powder and top with shaved or finely grated chocolate.
  7. Please keep in mind this will yield a large quantity so the recipe can always be cut in half
