PRIME Giant Meatball

1PoundGround beef
1/2PoundGround pork
1/4TSPBlack pepper
1/2EachMinced white onion
1TSPMinced garlic
3/4CupParmesan cheese
1CupItalian Bread crumbs
1TBSPChopped Parsley
  1. Add all ingredients to a bowl.
  2. Mix everything by hand. Let sit in the cooler/refrigerator for 30 minutes.
  3. Weight to 8-10oz and roll into balls or smaller (2-3 oz) if desired- will make more if smaller
  4. Brown meatballs in hot olive oil in a sauté pan before transferring to the oven
  5. Cook at 350 degrees for 30 minutes and rotate cook for an additional 20 minutes.
  6. Garnish with basil and crostini and top with homemade tomato sauce
  7. Top with parmesan or dried fresh ricotta
